These barrels are from an organic maple syrup farm. Barrels originally aged Heaven Hill Bourbon and later aged maple syrup for several months. The sugar content of the syrup absorbs the moisture from the oak and dries out the barrel. Each barrel is carefully steamed and pressure tested before shipping to ensure each barrel is swelled and water tight. Barrels smell boozy with notes of caramel and vanilla. Barrels are 53 gallons each.
